As a WAHM I’m always looking for fun new recipes for my family to try that don’t include a ton of work.  While Pinterest is usually a lot of help, I sometimes rely on my good old fashioned cookbooks.  Yes, real cookbooks!

Teriyaki Chicken and Vegetable Stir-fry
Marinated in soy sauce and finished with a splash of teriyaki, this tender, juicy chicken is rich in authentic Japanese flavors.  The crunchy vegetables add texture and color to the dish, making it a real feast for the eyes – and the stomach.
Serves 4
Freezer-friendly
Ready in under 15 minutes
3 x 5oz (150g) skinless, boneless chicken breasts, cut into strips
1 tbsp soy sauce
Low-calorie cooking spray
2 carrots, peeled and cut into thin strips
1 red bell pepper, deseeded and cut into thin strips
3½oz (100g) snow peas, halved lengthwise
3½fl oz (100ml) teriyaki sauce
Place the chicken in a glass bowl with the soy sauce and toss to coat well.
Spray a large, nonstick wok or frying pan with low-calorie cooking spray and place over a high heat.  Add the chicken mixture and stir-fry for 2-3 minutes. 
Add the vegetables and stir-fry for 3-4 minutes. 
Pour in the teriyaki sauce and stir-fry for 2-3 minutes, or until piping hot, before serving.  

Turkey Meatballs with Herbed Tagliatelle
Making your own meatballs is fun: just mix the ground turkey with the spices and use your hands to shape them.  Home-made tomato sauce and tagliatelle are the perfect partners for this filling favorite.
Serves 4
Freezer-friendly
Ready in 1 hour 20 minutes, plus chilling
1lb (450g) extra-lean ground turkey breast
3 garlic cloves, peeled and crushed
1 tsp ground cumin
2 tsp ground cinnamon
Salt and freshly ground black pepper
12oz (340g) dried tagliatelle
½ cup finely chopped mixed herbs (parsley and tarragon)
Cooked snap peas, to serve
For the sauce
1 small onion, peeled and finely chopped
1 garlic clove, peeled and crushed
1 carrot, peeled and finely chopped
2 celery sticks, finely chopped
2 x 14oz cans diced tomatoes
Place the ground turkey, garlic, cumin, and cinnamon in a bowl and, using your hands, mix until well combined.  Season well.  Cover and chill in the fridge for 1 hour to allow the flavors to develop.
Meanwhile, make the sauce by placing a large, nonstick frying pan over a high heat.  Add the onion, garlic, carrot, and celery, stir, and cook over a medium heat for 6-8 minutes.  Stir in the tomatoes and bring to a boil.  Reduce the heat, cover, and simmer gently for 25-30 minutes, stirring occasionally.  Season well.
For the meatballs, make small, walnut-shaped  balls from the turkey mixture.  Add the meatballs to the sauce to simmer gently for the last 12-15 minutes of cooking or until cooked through.  Stir to coat evenly in the sauce. 
While the meatballs are cooking, cook the pasta according to the packet instructions.  Drain well, stir in the chopped herbs, and season well. 
Divide the herbed tagliatelle between four plates and top with with meatballs and sauce.  Serve immediately with the snap peas. 

Caramel Roasted Pears
Sweet pears coated in sticky syrup…mmmm! Serve with low-fat natural yogurt for a knock-‘em-out finale! 
Serves 4
Vegetarian
Ready in 30 minutes
4 medium pears, halved and cored
1 rosemary sprig
8 level tbsp sweetener
¼ cup (60g) honey
1 thick strip each of orange peel and lemon peel
1 cinnamon stick
Fat-free plain yogurt, to serve
Preheat the oven to 400°F.
Place the pears, cut-side up, in a shallow, ovenproof dish to fit snugly in a single layer. 
Place the rosemary, sweetener, honey, orange and lemon peel, cinnamon stick, and 7fl oz (200ml) of water into a small saucepan over a medium heat.  Bring to a boil and remove from the heat. 
Pour this syrup over the pears and bake in the oven for 15 minutes or until lightly browned and cooked through.  Serve with fat-free plain yogurt. 

Corn and Red Bell Pepper Chowder
Corn and bell pepper are both bursting with fresh flavors and this simple chowder is as easy to make as it is delicious.  Serve it up as a tasty appetizer or when you want a light supper.
Serves 4
Freezer-friendly
Vegetarian
Ready in 35-40 minutes
6-8 scallions, finely sliced, plus extra shredded scallions to serve
1 garlic clove, peeled and crushed
3 cups (800ml) water or vegetable stock and 1 tbsp concentrated vegetable stock
2 x 14oz (400g) cans corn
1 red bell pepper, deseeded and finely diced
¼ cup chopped cilantro
1 tbsp soy sauce
Salt and freshly ground black pepper
Place a large, nonstick frying pan over a medium heat.  Add the scallions, garlic, vegetable stock, and concentrated stock and bring to a boil.
Add the corn, bell pepper, cilantro, and soy sauce and return to a boil.  Reduce the heat, cover and cook for 10-15 minutes.
Remove from the heat, season well and ladle into warmed bowls to serve.  Garnish with shredded scallions before serving.  

Salsa Burger and Fries
Who would have guessed that a burger and fries could taste this good and still be healthy?  The delicious patty really satisfies and the fresh salsa is a treat for the taste buds.
Serves 4
Ready in 40 minutes
4 large baking potatoes peeled and cut into ½ inch fries
Sea salt and freshly ground black pepper
Low calorie cooking spray
1 3/4lb extra lean ground beef
4 oz very finely chopped onion
4 tsp Worcestershire sauce
4 garlic clove, peeled and crushed
4 whole-wheat buns
4 lettuce leaves and 4 slices of tomato
Grated carrot and shredded red cabbage, to serve
For the salsa:
3 ripe tomatoes, finely chopped
1 garlic clove, peeled and finely chopped
½ small onion, peeled and finely chopped
1 tsp artificial sweetener
4 tbsp water
1-2 tsp Worcestershire sauce
1-2 drops Tabasco sauce
1               Preheat the oven to 475 degrees.
2               Place the fries in a pan of lightly salted boiling water for 3-4 minutes.  Remove from the water and drain well on paper towels, then leave to dry for about 10 minutes.
3               Remove the water from the pan and return the fries to the dry pan, cover with a lid, and shake to roughen up the edges of the fries (this helps them to crisp up when you bake them).  Transfer to a nonstick roasting pan, spray with low-calorie cooking spray, and bake for 20-25 minutes, turning occasionally.
4               Meanwhile place all of the salsa ingredients in a small saucepan and bring to a boil.  Reduce the heat to low and cook gently for 4-5 minutes.  Remove from the heat and allow to cool to room temperature.
5               To make the hamburgers, place the ground beef, onions, Worcestershire sauce, and garlic in a bowl and, using your hands, combine thoroughly.  Season well, divide into four, and shape into patties.  Spray the burgers with low-calorie cooking spray, place under a hot broiler, and cook for 5-6 minutes on each side, or until done to your liking.  Remove and keep warm.
6               To assemble the hamburgers, split the buns in half and place a lettuce leaf and a tomato slice on top of each base.  Top with a burger and some of the salsa and serve immediately with the fries and some grated carrot and shredded red cabbage.

  2. I can't believe you have my go to quick meal listed! Chicken teriyaki! I usually do it with stir fry all over yakisoba noodles…. Another family favorite quick meal that I enjoy making is pan seared porkchops with homemade mashed potatoes and sautéed mixed vegetables. Thanks for the pear recipe above, it sounds like something my hubby would really enjoy and I plan on trying it! Thanks for the chance to win!
